CARRIE'S COOKBOOK - Butterbeer

BUTTERBEER

2-3 scoops vanilla ice cream
� cup butter
2-3 cups rootbeer (or more)

Melt vanilla ice cream and butter in a medium sized saucepan over medium low heat, stirring occasionally. When melted, mixture becomes very frothy. To this add enough rootbeer for two large mugs or tankards. Pour slowly; if you pour too fast the root beer becomes flat (due to the heat). Pour into two mugs and sprinkle with a little brown sugar (optional).

I have tried all the butterbeer recipes out there, and this is a combination of two or three. I had in my mind what I thought it should taste like, so I mixed the recipes together. This makes me feel like I'm right in Hogsmeade!!
