CARRIE'S COOKBOOK - Peanut Brittle

PEANUT BRITTLE

2 cups sugar
1 cup white corn syrup
� cup water
1 tsp vanilla
1 cup butter
1 tsp baking soda
1 lb spanish peanuts

Mix butter, sugar, corn syrup, and water over medium low heat until angel hair forms from your spoon. Then add peanuts, raising temperature and bring to a hard boil, stirring almost constantly. Remove from heat, and add vanilla and baking soda. Immediately pour on a generously buttered cookie sheet. CAREFUL, mixture is EXTREMELY hot.
