DOUBLE CHOCOLATE MINT CHIP COOKIES
1-1/2c mint flavoured chocolate chips
Preheat oven to 375�F. Melt over hot (not boiling) water, 3/4c chocolate chips; stir until smooth. Cool to room temperature. In bowl, combine flour, baking soda and salt; set aside. In bowl, beat butter, sugar, brown sugar and vanilla extract until creamy. Add melted chips and egg; beat well. Gradually blend in flour mixture. Stir in remaining chips and nuts. Drop by rounded tablespoons onto greased cookie sheets. Bake for 8-9 minutes.

3/4t baking soda
1/2t salt
1/2c butter, softened
1/2c firmly packed brown sugar
1/4c white sugar
1/2t vanilla extract
1 egg
1/2c chopped nuts (optional)
