CARRIE'S COOKBOOK - Deli-style Pasta Salad

DELI-STYLE PASTA SALAD

4c corkscrew-shaped pasta
1c quartered, sliced zucchini
1/4c sliced green onions
1/4c slivered red pepper
leaf lettuce
8oz. salami or bologna, cut in sticks
2 small tomatoes, cut in thin wedges
8oz. mozzarella, provolone, or cheddar cheeses (or all three) diced

Cook pasta according to package directions; drain, cool. Mix together pasta, zucchini, onions and red pepper. Place mixture in large shallow bowl lined with leaf lettuce. Arrange rings of meat, tomatoes and cheese on top of patsta. Serve with vinaigrette dressing of your choice.
