CARRIE'S COOKBOOK - Crunchy Orange Fish Filets

CRUNCHY ORANGE FISH FILETS

1lb fish fillets, (cod, haddock, etc.) fresh or frozen
2c crisp rice cereal
1/4c finely chopped, fresh parsley
1/2t grated orange rind
1/4t salt
1/4t dried tarragon leaves, crushed
1/8t pepper
2t softened butter
2 oranges, thinly sliced

Pat fish dry with paper towel; set aside. Place cereal in shallow dish or pan; crush to crumbs (about 3/4c). Stir in chopped parsley, orange rind, salt, tarragon, and pepper. Melt butter in skillet. Dip fillets in butter, then coat with cereal mixture. Place in single layer on lightly greased shallow baking pan. Bake at 375�F for 20 minutes or until fish flakes easily with fork. Do not cover or turn fish while baking. Serve with orange slices.
