CARRIE'S COOKBOOK - Curried Eggs on Rice

CURRIED EGGS ON RICE

1/4c butter
1 large onion, finely chopped
1 large, tart apple, cored and chopped
1/4c all purpose flour
1T curry powder
1/4t salt
2c chicken broth
6 hard cooked eggs, quartered
1/4c raisins
3c hot, cooked rice
1/4c flaked, toasted coconut
2T chopped, salted peanuts

In medium skillet, melt butter over medium heat. Add onion and apple. Cook, stirring often, until tender. Stir in flour, curry powder, and salt. Gradually stir in broth. Cook, stirring constantly, until thickened. Add eggs and raisins and heat through. Serve over rice. Sprinkle with coconut and peanuts.
