Cheery Cherry Truffles

CHEERY CHERRY TRUFFLES

1c semi-sweet chocolate chips
2T butter
1T milk
1/4t almond extract
20 maraschino cherries
1/2c desicated coconut

In double broiler over hot (not boiling) water, combine chocolate chips, butter, and milk. Heat until melted and smooth. Remove from heat; stir in almond extract. Refrigerate mixture until easy to shape, about 20 minutes. Shape a well-rounded teaspoon of chocolate mixture around each cherry. Roll in coconut. Chill.
