ELEGANT RACK OF PORK
3-4 lbs loin rack of pork, rib end Place roast on rack in shallow roasting pan. Wrap ends of bones with tin foil. Sprinkle roast with rosemary and lemon pepper. Insert meat thermometer into the centre of the rack without touching any bone. Roast uncovered in 325F oven for 20-25 minutes per pound, or until the meat thermometer reads 160F. Pork is cooked when there is still just a hint of pink in the centre of the roast. Do not overcook. Remove foil from bones and let stand for 10 minutes. If desired, decorate the bones with paper frills or colored foil. To serve, slice in between the bones. Serve with wld rice or roasted potatoes, julienned carrots and steamed snow peas.
