EASY BLUEBERRY SWIRL CHEESECAKE
3/4c wild blueberries
Combine blueberries with 2T orange juice, 2Tsugar, and cornstarch in small saucepan. Bring to a boil over medium heat and boil one minute; cool. Beat cream cheese with sugar. Soften gelatin in orange juice. Bring to a boil to dissolve gelatin; cool slightly. Stir gelatin mixture into cream cheese mixture along with orange rind; mix well. Fold into whipped topping. Spoon half of the cheese mixture into pie shell. Spoon half of the blueberries over cheese mixture. Top with remaining cheese mixture. Spoon remaining blueberries evenly over cheese mixture and swirl with a table knife to marble. Chill at least three hours or overnight.

1 (8oz) pkg cream cheese, softened
1/2c granulated sugar
1 envelope plain gelatin
1/4c orange juice
1t grated orange rind
1c whipping cream
