Bulgur Salad

BULGUR SALAD

1c bulgur wheat
2c water
1/2t salt
3/4c chopped zucchini
1/2c red pepper, finely chopped
1/2c fresh parsley, finely chopped
1/4c sliced scallion
2T plain, low-fat yogurt
1T olive oil
1T vegetable oil
1T lemon juice
1/4t salt
dash pepper
cherry tomatoes (opt)
scallion (opt)

To prepare salad, place bulgur in medium bowl. Bring water to a boil; add salt. Pour over bulgur. Let stand 20 minutes. Drain and return to bowl. Add zucchini, red pepper, parsley, and scallion. In small bowl, mix together remaining ingredients, except cherry tomatoes and scallion. Pour over bulgur and vegetables. Toss until well coated. Garnish with cherry tomatoes and scallion.
