Buffalo Chicken Wings

BUFFALO CHICKEN WINGS

1/2c mayonnaise
1/4c sour cream
1/4lb blue cheese, rumbled
4 ribs celery
1 small onion
2 cloves garlic
1T oil
1/2 lemon
8oz can tomato sauce
1/4c Tabasco sauce
1/2t salt
3lbs chicken wings
oil for deep-fat frying

Combine mayonnaise and sour cream. Crumble and stir in cheese. Cut celery into sticks. Chop onion and mince garlic. Cook onion in oil over medium heat until soft, about 2 minutes. Add garlic and cook 1 minute. Squeeze in juice from lemon. Stir in tomato sauce, Tabasco, and salt and cook, 5 minutes. Remove wing tips and cut wings in half at joint. Heat oil for deep-fat frying to 375F. Cook wings in hot oil until brown, about 8 minutes. Toss chicken in tomato sauce. Serve with celery and blue cheese dressing.
