Black Forest Cupcakes

BLACK FOREST CUPCAKES

FILLING:
1 pkg (8oz) cream cheese, softened
1 egg
1c pitted sour cherries, drained
3/4c mini chocolate chips
CAKE:
1/2c butter
1-1/2c brown sugar
3 squares unsweetened chocolate, melted
1 egg
1t baking soda
1c sour cream
1-2/3c all purpose flour
2t baking powder
3/4c mini chocolate chips

FILLING: Beat cream cheese and egg together with an electric mixer until smooth and fluffy. Fold in cherries and chocolate chips. Set aside. CAKE: Cream butter and sugar together with an electric mixer until well blended. Beat in chocolate and egg; mix well. Stir baking soda into sour cream and let stand for a few minutes. Combine flour and baking powder. Stir dry ingredients alternately with sour cream into chocolate mixture until mixed. Fold in 1/2c chocolate chips. Line 24 muffin cups with large sized paper liners. Fill with 1/2 of chocolate batter by placing heaping teaspoonfuls into each cup. Place a tablespoon of filling over each cupcake. Top with remaining chocolate batter. Sprinkle with remaining chips. Bake at 350F for 20-25 minutes. Cool on wire rack.
