BANANA FRITTERS
1/2c flour
Sift the flour and salt together in a mixing bowl. Add the egg and melted butter and mix in milk. Beat until smooth. In second bowl, mix the sugar with alcohol, and stir in the pieces of banana. Set aside for about 40 minutes. Fill a deep frying pan 1/2 to 1/3 full of oil and heat to 375F. Just before frying, drain the banana and sprinkle with a little extra flour. Whisk the egg white until stiff and fold it into the batter. Dip the banana pieces into the batter, then deep fry until golden. Drain on paper towel and serve hot sprinkled with icing sugar.

3T rum or brandy
6 ripe bananas, each cut into 4 pieces
oil for deep fat frying
extra flour
1 egg white
icing sugar
