Kim's Oriental Pot

KIM'S ORIENTAL POT

2 medium-sized onions
3 cloves of garlic
lots of curry
250g (approx. 1-1/2c) diced pork
1 can of coconut milk
2 apples, shredded
1 can of bamboo shoots
50g (2-1/2T) of dessiccated coconut

Fry curry in a pot with oil a few minutes, add chopped onion and garlic and fry a further two minutes. Add diced pork and fry on for a few minutes. Add coconut milk, dessiccated coconut, bamboo shoots, shredded apples, salt and pepper and boil for 45 minutes. Serve with rice and bread. Enjoy.
