Apricot Pecan Loaf

APRICOT PECAN LOAF

1/2c all purpose flour
1/2c whole wheat flour
1/2c granulated sugar
2t baking powder
1/2t salt
1/2t cinnamon
3/4c dried apricots, chopped
1/4c pecans, chopped
2c bran flakes
1/2c milk
1/2c orange juice
1t grated orange rind
1 egg
1/4c vegetable oil

Stir together flours, sugar, baking powder, salt, and cinnamon. Stir in apricots and pecans. Set aside. In large bowl, mix cereal, milk, orange juice, and orange rind. Let stand two minutes. Add egg and oil. Beat well. Add flour mixture, stirring, just until combined. Spread in greased 8x4" loaf pan. Bake inpreheated 350�F oven 50-55 minutes, or until golden brown and wooden pick inserted in center comes out clean. Cool 10 minutes before removing from pan. Cool completely before slicing.
VARIATION: Substitute pitted dates & walnuts for apricots & pecans.
