APRICOT GLAZED CORNISH HENS
4 cornish hens (1-1/2lbs each) Preheat oven to 400�F. Line a 14x2" baking pan with alluminum foil; set aside. Remove giblets from hens. Rinse hens with cold water and pat dry. With scissors or butcher shears, remove skin from hens, if desired. Tuck wings under back and tie legs together. Place hens, breast side up in foil-lined pan. Sprinkle hens with salt. For apricot glaze, in small bowl combine apricot spread & cinnamon. Brush hens with apricot glaze; set aside remaining glaze. To prevent over-browning and preserve juiciness, use a foil tent over hens. (Crimp foil onto long sides of pan to hold into place.) Bake 20 minutes. Remove foil tent; brush with glaze. Brushing with glaze two more times, bake uncovered until hens are tender and juices run clear, 30-35 minutes longer. Makes 4 servings.
