Apple Cheese Muffins

APPLE CHEESE MUFFINS

1-1/2c all purpose flour
1T baking powder
1/4t salt
1-1/4c finely crushed Kellogg's Mini-Wheats cereal
1 egg
1/3c firmly packed brown sugar
1/4c vegetable oil
1c milk
1-1/4c chopped apple
1c finely shredded Cheddar cheese

In large bowl, stir together flour, baking powder and salt. Add crushed cereal. Set aside. In second bowl, beat egg, sugar and oil; stir in milk. Add to flour mixture, stirring just until combined. Quickly fold in chopped apple and shredded cheese. Portion batter evenly into lightly-greased or paper-lined muffin pan cups. Bake at preheated 400�F about 22 minutes or until tops are light golden and spring back when lightly touched. Makes about 12 muffins.
